beautiful bc - our vacation this year part 1

 our vacation started in langley/vancouver, because The Boy was off to see his first concert - The Weeknd.

 

we left him and his bestie in the merch line, and went to find some shade.  it was WARM.

 we saw them a few more times that afternoon, for food, money, water and access to the hotel to charge their phones, and then they were off.  we got this photo from them later - 

 meanwhile the 3 of us left to eat and walk and shop.  we had curry pork katsu and sushi for lunch.

The Girl and I lived out our tick-tok dream when we found a place to buy the ice in a cup and drink in a bag combo.

later i had an EXCELLENT iced lemon green tea that i'm still trying to replicate at home.  for dinner we had shawarma.  

 The Boy had the biggest smile on his face when he came back to the hotel after the concert.  He said it was the best day of his life. :)

chickpea wraps

 drain and rinse a can of chickpeas, then add to a pan with some oil, over medium heat.  sprinkle in some paproka, cumin, oregano, salt, pepper.... whatever tastes good.  fry gently, careful not to burn, until hot and fragrant.  add to a wrap with tatziki, cucumber, tomato and feta.

 the next morning for breakfast, take some of the leftovers and mash with a bit of mayo and lemon juice, then spread on a fresh toasted everything bagel.

 

elote at the farmers market

 we tried the elote at the market and it was so SO good.  i bought a small cup because i thought it would only be me and the mister sharing, but the girl tried it and loved it and we had to fight her to get any more for ourselves.

 we bought some fresh corn from the market last weekend and made it ourselves - corn, sour cream, feta and tajin.  so good.

chicken boxty

 sometimes there comes a time when you just have to say - i don't care what the kids want to eat, or will eat, or don't like to eat.  i am going to make what I want to eat!

and then you do and everyone likes it.

that happened recently when we had some leftover rotisserie chicken in the fridge and my brain said - make boxty! 

and so i did.

i used this recipe for the pancakes, and then just sort of made my own filling because i didn't have bacon or mushrooms, but used peas and onion instead.

 

 

a couple of days later there were still 2 pancakes in the fridge, so the mister and i turned them into breakfast boxty's with egg
